first real evidence of the existence of ice cream
was in China’s Tang period (A.D 618-97).
King Shang had 94 ice men on his staff who helped
make a dish based on buffalo milk, flour and camphor. |

The first step towards giving us
the kind of ice cream we enjoy today was made
by Nancy Johnson (USA) who invented the hand-crank
freezer (1846). In the 1920s Clarence Vogt produced
the first continuous process freezer which opened
up the possibility for commercial ice cream manufacture
Britain is Europe’s third biggest consumer
of ice cream at around 8 litres per person. |

On average, people in Scotland and Northern Ireland
